We are looking for a Lead Sushi Chef to join our culinary team and prepare delicious plates for our guests. Lead Sushi Chef responsibilities include handling a wide range of raw fish and other ingredients, managing food stock, and working with an attention to detail to fulfill all orders within quality standards. Creating menu, ordering and stocking menu items. To be successful in this role, you should have experience with Japanese cuisine and be available to work during our opening hours. Ultimately, you will help us establish our reputation as one of the best sushi places in the area and increase our clientele.
Job Description
Principle duties and responsibilities (Essential Functions) include:
Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
Prepare all types of sushi, including maki, nigiri and sashimi.
Select fresh fruits and vegetables to make high-quality dishes (like avocado, mango, and carrots)
Manage food prep activities.
Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies.
Monitor food stock and place orders, as needed.
Maintain hygiene principles in all cooking areas and clean your space at the end of the shift.
Ability to work in high pressure environments.
Ensures all items prepared at sushi bar station are presented in accordance with departmental specifications.
Ability to perform work without direct supervision and handle multiple projects simultaneously. Ability to deliver high quality customer service and responds to customer needs.
Ensure uniform and personal appearance are clean and professional; maintain confidentiality of proprietary information; protect company assets.
Display daily professional, courteous, attentive, helpful, and positive attitude towards all guests, fellow employees, and managers.
Ability to work cohesively with co-workers as part of a team to reach common goals.
Perform other job duties as requested by supervisors/managers as other job duties maybe assigned as needed.
Understanding of Sonesta's company and safety policies and maintain compliance with OSHA and the health department requirements.
Qualifications and Experience:
Highschool diploma or GED required.
Valid Driver's License
Reading and writing abilities to understand departmental correspondences and complete all required departmental documents.
Excellent interpersonal and customer service skills, including dealing with difficult guests.
Must have knowledge and experience in the preparation of specialized innovative, New Style, Japanese cuisine.
Possess high attention to detail, speed and accuracy while working as part of a highly functional team..
Candidate needs to be proficient with technical terminology used in Japanese Cuisine and Sushi preparation.
2 years minimum experience in similar position and in a high-volume establishment and/or experience in working in upscale sushi restaurants.
Associate degree in Culinary Arts or American Culinary Federation (AFC) certification is preferred.
Advanced knife skills preferred.
Sound knowledge of food safety regulations.
Valid food handler's license.
Work Environment:
The noise level is generally moderate to loud.
The temperature can vary from cold (walk-in refrigerators and freezers) to hot (cooking on the line, using ovens, using frying machines, etc.)
May be required to work outdoors under covered areas.
Physical Demands:
Ability to r each overhead and below the knees, including bending, twisting, pulling, and stooping. Prolong period of standing.
Expected Hours of Work:
Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel.
Must be flexible to work various days and various shifts of the week to include weekends, holidays, days, nights and overnight.
Regular attendance in conformance with the standards which have been established by the hotel from time to time is essential to the successful performance of this position.
Ten to twelve hour shifts sometimes required.

Pay Range
$36.00-$39.00. Base pay offered may vary depending on various factors including but not limited to job related knowledge, skills and job specific/overall experience
