Overview



¡VIVA! Miami, crafted by the renowned Chef Ray Garcia, is a culinary destination set to redefine the dining experience in Sunny Isles Beach. Viva Miami will be located in the reimagined Newport Beachside Hotel and Resort, which will relaunch as The Sunny, Miami's new premier beachside retreat opening in late 2024.


We are looking for a Chef de Cuisine to lead our kitchen team, uphold our high standards and collaborate with our Executive Chef.



Responsibilities




Position Overview



As the Chef de Cuisine of Viva Miami, you will be responsible for the day to day operations of our kitchen and work closely with our Executive Chef, ensuring the highest standards of quality and creativity. Training and motivating the team to maintain peak performance will be a crucial aspect to your role, ensuring a seamless and memorable experience for our guests.



Key Responsibilities



  • Kitchen Management: Manage and supervise kitchen staff, including sous chefs, supervisors, line cooks, prep cooks, and dishwashers, to ensure smooth and efficient operations during service hours.

  • Staff Training & Development: Train and mentor kitchen staff in proper cooking techniques, food safety procedures, and kitchen protocols to maintain a skilled and motivated team.

  • Inventory Management: Manage ordering and inventory processes to ensure cost of goods sold are aligned with budgets.

  • Food Preparation: Oversee the preparation and presentation of all dishes to ensure consistency, quality, and adherence to recipe standards, while minimizing waste.

  • Quality Control: Maintain high standards of food quality, freshness, and sanitation in compliance with health and safety regulations.

  • Collaboration: Work closely with the team to ensure seamless coordination between the kitchen and dining room, including timely service and effective communication.




Qualifications




Qualifications



  • Proven experience as a Chef de Cuisine or similar leadership role in a high-end restaurant or hotel.

  • Familiar with cost control measures, ordering, vendor management, invoices, scheduling, hiring, performance management

  • Excellent communication skills and leadership qualities: team focused, and people driven

  • A deep passion for culinary arts and a strong understanding of diverse cuisines, particularly Latin and Miami-inspired flavors.

  • Exceptional creativity and ability to craft innovative, visually stunning dishes.

  • Strong leadership and communication skills, with a track record of developing and motivating kitchen teams.

  • Excellent organizational and time management skills.

  • Ability to thrive in a fast-paced, dynamic environment.

  • Culinary degree or equivalent professional experience.
