Position Summary

Directs the food service staff in preparation and service of food in a residence hall serving unit; monitors daily food production and presentation to ensure that meals are served in conformance with prescribed menus, recipes, and quality standards; implements training programs for support staff; receives customer concerns or suggestions and resolves them.

• Supervises employees in preparing and serving food in order to ensure acceptable food products and service.


• Assists in the maintenance of health, safety and sanitation standards.


• Assists in maintaining personnel and payroll records.


• Inspects equipment for proper use and maintenance.


• Monitors food and supply inventories in order to control costs and have enough supplies for menu items.


• Selects, trains, schedules, disciplines and evaluates employees.


• Supervises cleaning, maintenance and painting crews during the summer months.


• Plans special activities independently and with customers in order to provide more diverse food items and services within cost parameters.


• Calculates and analyzes past and present information in order to forecast food consumption.


• Conducts daily meetings with regular employees in order to review previous menus and prepare for upcoming meals and events.


• Develops systems, programs and ideas for implementation in order to control and minimize costs.

All positions in SLE are designated as critical status. In the event of a university closure, modification, or suspension of operations due to snow or other emergency condition, persons in this position are expected to make all reasonable attempts to report to work as scheduled for the duration of the closure/suspension. If a person has an approved remote work agreement to work a portion of their normally scheduled work hours remotely, they may be called upon to work on-site to serve the MSU community.

Unit Specific Education/Experience/Skills

Knowledge equivalent to that which normally would be acquired by completing a four-year college degree program in Hotel Restaurant and Institutions Management, Business Administration, Dietetics, Food Systems and Economics Management or Nutrition; one to three years of related and progressively more responsible or expansive work experience in customer relations, food service practices, sanitation and safety procedures, familiarity with food preparation equipment, accounting skills and supervisory and managerial experience; or an equivalent combination of education and experience.

Desired Qualifications

Experience in food handling, food service production, banquet coordination, planning, designing, and setting up special events, development, and familiarity with food preparation equipment.
