Job Description:

Position Summary: 

Reports to the Executive Sous Chefs and Jr. Sous Chefs, supervises the chain of food preparation to ensure proper sanitation and food storage standards are enforced.  

This position will gain experience by working with and around Chef Joseph Leonardi, CMC, AAC, who is 1 of 72 Certified Master Chefs in the Country.   

Essential Responsibilities: 

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.  

  


  • Supervise the chain of food preparation by the line cooks to ensure the recipes for menu items are followed. 


  • Prepares items in accordance with established recipes for a consistent product. 


  • Expedite orders in a timely manner. 


  • Ensure that all cooking stations are adequately stocked with the necessary meal ingredients and cooking equipment. 


  • Enforce that all cooking stations and surfaces are cleaned and disinfected before and after each shift. 


  • Involved with the development and writing of menus. 


  • Support Jr. Sous Chefs and Executive Sous Chefs with maintaining kitchen standards 


  • Essential in the development of new recipes  


  • Adhering to standard food rotation practices to reduce food wastage and minimize the risk of contamination. 


  • Assessing the quality of delivered food supplies. 


  • Actively assist with the management of inventory controls and the ordering of food for menus. 


  • Exceed Member Expectations  


  • Positive, Cooperative attitude toward all co-workers and management 


  • Execute and support banquets and club events 


  • Flexibility among special requests or changes  

Knowledge and Skill Requirements:

  • Ability to prep and plate up ala carte and special event appetizers and entrees 


  • Responsible for maintaining par stocks of daily items 


  • Ability to read BEO’s and help execute and write prep lists 


  • Ability to communicate effectively with line cooks and delegate tasks assigned by the sous chefs 


  • Ability to read daily event orders and prep sheets 


  • Ability to accommodate special requests from members

Education & Work Experience Requirements:  


  • Minimum of 2 years’ experience in food preparation position is required 


  • Country Club experience a plus 


  • Degree from a post-secondary culinary arts training program preferred
