The iconic Hotel del Coronado is looking for a talented Chef de Cuisine to oversee Serẽa , oursea-to-table dining experience offering elevated coastal cuisine with a Mediterranean flair !

It's an exciting time to join the resort with a recently completed$200M renovation project thatincluded additional banquet space and other exciting F&B enhancements.Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 700 rooms ( to include cottages and villas ), 96,000 square feet of banquet space, and 10 food and beverage outlets. This includes 4 restaurants, 2 bars, food truck, marketplace, andice cream shop.

Serẽa , created by Clique Hospitality , offers a robust, environmentally friendly menu that includes raw and cooked options-from fresh whole catch, to seafood towers and composed dishes. The menu at Serẽa showcasesthe comprehensive, complex and expressive flavor profiles of the best fresh fish, intricate seafood and heritage meats the region has to offer, prepared by San Diego native and Clique Hospitality Executive Chef and Partner, JoJo Ruiz.

The ideal candidate will be an exceptional leader with a great vision for creativity, a drive for innovation, and fosters a positive and engaging culture. At least 2-3 years of Chef de Cuisine experience in a forward focused, chef driven restaurant is required. Prior hotel and union management experience are a plus.

What will I be doing?

As Chef de Cuisine, you would be responsible for leading the culinary production of a designated kitchen in the hotel's continuing effort to deliver outstanding guest service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:


  • Lead daily culinary production, to include, but not limited to, preparation and production of meals, food quality and presentation, compliance with all safety and sanitation standards and regulation, team member productivity and performance, cost controls and overall profitability
  • Perform general management duties including, but not limited to, systems management, budget and forecasting, report generation, department management and meeting participation and facilitation
  • Visually inspect, select and use quality food and beverage products including, but not limited to, fruits, vegetables, meats, fish and spices
  • Create and implement new menus and individual food items
  • Monitor and develop team member performance to include, but not limited to, providing supervision and professional development, conducting counseling and assisting with evaluations, scheduling and assigning work and delivering recognition and reward
  • Recruit, interview and train team members

Salary Range: The annual salary range for this role is $92,000 - $97,000.00 and is based on applicable and specialized experience and location.
