A Culinary Sushi Supervisor is responsible for the administration of the entire sushi bar area in the absence of the Chef and/or Sous Chef. Assist and support kitchen staff as needed.
What will I be doing?
As a Kitchen Supervisor, you would be responsible for assisting and participating in daily culinary operations in the hotel's continuing effort to deliver outstanding guest service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:
• Select, train, supervise, develop, discipline, and counsel team members in accordance with Hilton policies and procedures.
• Set up, restock, maintain food preparation areas and make sure requisitions are filled out daily.
• Monitor the quality and consistency of all food served from the lines.
• Assist in the directing and correcting the presentation and portioning of food.
• Coordinate all food orders between stations and food servers.
• Responsible for food quality and control and proper plate presentation.
• Prepare food in accordance with working menus, recipe cards and photos.
• Responsible for implementation of all new menu items as directed from Executive Chef.
• Other duties as assigned by Chef/Sous Chef.
• Oversee preparation of food in all areas during assigned shift
• Prepare fish and meats
• Assist and support kitchen team members
• Communicate any challenges to Chef/Sous Chef
• Assists Chef/Sous Chef in overseeing cleanliness and sanitation
• Set up daily specials and happy hour food according to schedule and spaces
• Visually inspect food quality and presentation
• Prepare staff schedules with guidance of Chef/Sous Chef
• Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
• Ensure compliance with federal, state, local and company food handling and food storage procedures
EXPERIENCE
Minimum three years of experience as a sushi cook. Minimum two years of experience in a similar environment. Formal culinary training helpful. A minimum of 1 year of Omakase or direct sushi counter customer interaction experience required
LICENSES OR CERTIFICATES
Ability to obtain government license or certificate. CPR Certification and/or First Aid Training required. Manager ServSafe Certification.
