Description: Meat industry client in the Columbus, GA area is seeking a Production Supervisor with meat portioning experience, cutting to customer specifications. This person is responsible for overseeing the efficient and safe operation of the meat portioning department within a processing facility. You will leverage your meat portioning expertise to lead a team, ensure product quality and consistency, and meet production targets.
Responsibilities
Production & Efficiency:
Develop and implement daily production plans to meet output quotas while maintaining safety and quality standards.
Oversee the portioning process from whole cuts to primal cuts, subprimals, and finished cuts.
Monitor equipment functionality and identify potential breakdowns.
Implement cost-saving measures and identify opportunities to improve efficiency.
Team Management:
Lead and motivate a team of meat cutters, delegating tasks and providing training.
Conduct performance evaluations and provide constructive feedback.
Ensure adherence to safety protocols and proper cutting techniques.
Address employee concerns and maintain a positive work environment.
Quality Control:
Conduct regular inspections of meat cuts to ensure they meet quality specifications (weight, trim, appearance).
Implement corrective actions to address any quality control issues.
Maintain accurate records of production and quality control data.
Compliance & Sanitation:
Ensure the meat portioning department operates in accordance with all food safety regulations (HACCP, USDA) and sanitation protocols.
Conduct sanitation audits and implement corrective actions as needed.
Liaise with inspectors from regulatory agencies.
Inventory Management:
Monitor inventory levels of raw meat cuts and finished products.
Coordinate with purchasing and inventory control departments.
Minimize waste and ensure proper product rotation to maintain freshness.
Qualifications
Minimum of 3-5 years of experience in meat processing, with a strong focus on meat portioning.
Excellent knowledge of various meat cuts, primal cuts, subprimals, and finished product specifications.
Proven ability to lead and motivate a team in a fast-paced production environment.
Strong understanding of food safety regulations (HACCP) and sanitation procedures.
Excellent communication, interpersonal, and problem-solving skills.
Ability to prioritize tasks, delegate effectively, and work independently.
Strong attention to detail and a commitment to quality control.
Experience using meat processing equipment a plus.
