Prepares the necessary ingredients from formulas for each product by performing the following duties.
Responsibilities
Set up/assemble/tear down equipment as needed
Prepare oil and apply to rice product
Operates rice sorter and distribution process
Soaks rice in preparation for cooking
Operates rice cooker, tumbler & cooling operation
Gathers all necessary tools and containers for rice cooking and sets-up station or machinery for cooking.
Ensures that all raw materials are available for preparation.
Advises immediate supervisor of shortages of raw materials and equipment issues so as not delay production.
Ensure that raw material is consistence with standards (i.e., same size, shape, etc.)
Have knowledge of formulas – correct weights and measures of ingredients.
Cook foodstuffs in quantities according to formulas, set times and temperatures.
Control product flow to minimize weight loss in finished product.
Keep accurate reports of quantities of batches, temperature, weights and times. Documentation is to be returned to immediate supervisor.
Conducts moisture and texture tests on rice which includes sensory evaluation of product.
Keep accurate reports of down time.
Ensure that all cooking equipment and surrounding areas are clean at the end of the shift.
Return all raw materials back to proper place.
Check schedule for the following day and arrange with lead person for product needed.
Notify supervision of any problems with equipment to include safety switches and covers/guards.
Ensure that all Good Manufacturing Practices (GMP) are followed.
Follow all safety procedures

Report all injuries, unsafe conditions, unsafe acts and horseplay
Use proper lifting techniques
Use mechanical assistance (handjack, forklift, manlift)
Use personal assistance (buddy)

Qualifications
Prefer High School Diploma/GED
Be able to work in a fast-paced environment
Minimum of 1 year of experience in food manufacturing environment or equivalent type of manufacturing
Ability to communicate effectively verbally and written
Strong attention to detail and the ability to work rapidly and with a high degree of accuracy
Reliable
Self-driven

Forklift/Palletjack Certification
Continuously required to walk.
Frequent standing, reaching above shoulders, body bending, hand twisting, stooping, climbing stairs, handling – gross motor, and fine motor of the fingers.
Occasional reaching/working above shoulders, kneeling, crouching/squatting, climbing/working on ladders to heights of 8ft, pushing/pulling 100 pounds or more, lifting 100 pounds to a height of 4ft, carrying 60 pounds to a range of 20 ft (anything over 50 pounds use the buddy system). Also, on occasion, driving a forklift/palletjack.
Will be exposed to loud industrial type environments commonly found at plants and working with power equipment.
Varied temperatures from hot and humid to very cold.
